2 cooking apples unpeeled
200 ml water
1 tbsp Xylitol natural sweetener
1 tsp of cinnamon
120g soft butter
2 heaped tbsp of brown sugar or Xylitol
2 heaped tbsp of ground almonds
2 heaped tbsp of mixed seeds
2 heaped tbsp of chopped hazel nuts
2 heaped tbsp of crushed walnuts or mixed nuts
1 1/2 – 2 cups of mixed flour (plain flour, buck wheat flour and spelt flour)
Method
Cut the apples into thin slices and simmer them in 200ml of water with xylitol and cinnamon for ten minutes until all the pieces are soft. Make sure that you don’t let all the water evaporate, just add a little bit more if needed.
Leave to cool before spooning onto the bottom of a medium size pie dish.
For the crumble: Mix the soft butter, xylitol and ground almonds in a large mixing bowl.
Grind the seeds and nuts into small pieces or place in food processor briefly and add them into the bowl.
Add the flour and use your fingers to pinch the flour and butter and all the ingredients together into nice crumble mix.
Sprinkle the crumble gently over the apples.
Place in the oven at 180C for 20-30 mins.
Serve hot with oat cream or Banana N’ice Cream.
