1 tin butterbeans
100g cooked beetroot
2 cloves garlic
Handful mint leaves
2 tbsp olive oil
1 lemon, juiced
½ tbsp tahini
Method
Place all ingredients in a food processor.
Blend until smooth and serve with a drizzle of olive oil.
